Not all video is the same, yet the goal of encoding is always to create a good quality video with a file size that allows it to stream/play smoothly and glitch free.

Media encoding for video and audio is similar to the difference between print graphics and online graphics resolutions. For example, in the US video played on television is formated to a 720*480 (NTSC) resolution with 30 frames of video every second of play time. This is a huge amount of data and while perfect for TV and cable, it is far to much for a internet connection to handle.

This is why encoding was created. Encoding basically re-encodes the media so there is less information per frame. In most online uses the video image is scaled down in size, this also helps speed of loading and image quality. But with that said, there is always a fine line between creating good video quality and keeping the files size small enough to play without stopping and starting, a frustrating experience most of us have had.
